Prepare the pan
If you have the same pan as mine, from Kitchen Aid, it has a non-stick surface so there's barely anything to do. I just lightly greased it with butter, partly for the flavour too.

Line the pan with pastry
Spread the puff pastry out over the pan. Set aside a piece for decorating the top.

Prick and spread with jam
Prick the base with a fork and spread it with jam. You can even mix the jam with a splash of alcohol – rum, cherry brandy, port or something similar works well.
