Yogurt & Banana Cupcakes

Step-by-step method

Let’s cook

At a glance

These gentle yogurt and banana cupcakes come together quickly with simple mixing and baking. The whole process takes about 45 minutes, with just 10 minutes of hands-on prep work before the oven does the heavy lifting for 25 minutes. Once cooled, a creamy curd cheese topping with blueberries or blended banana makes them perfect for little ones and adults alike.

  1. 1/3

    Mix the batter

Grind the oats finely, mix with barley flour, then add the blended banana, yogurt, egg and baking powder (ideally use a phosphate-free baking powder).

  2. 2/3

    Fill the muffin cups

Stir everything together and fill muffin cups with the mixture, then bake in a preheated oven at 170°C for about 25 minutes.

  3. 3/3

    Decorate

Once the muffins have cooled, top them with curd cheese lightly sweetened with maple syrup (you can leave out the syrup, or sweeten the curd cheese with blended banana instead) and blueberries.
