Put loose-leaf jasmine tea into a large (1.5-litre) jar. Add thinly sliced pear, fresh thyme sprigs, and a few lemon slices.

Infuse overnight
Top up the jar with cold, filtered water. Seal it tightly and place it in the fridge for at least 12 hours, ideally overnight, so the flavours can beautifully meld together.

Strain carefully and serve
The next day, carefully pour the drink through a very fine sieve or cheesecloth to catch even the tiniest bits. Serve the finished cold brew chilled (ice cubes are welcome) or, if you like, at room temperature.
