At a glance
This elegant strawberry panna cotta brings together creamy ricotta, fresh fruit, and chocolate in a show-stopping dessert that's easier than it looks. You'll be whipping up smooth cream bases and letting them set in the fridge—the most time-consuming part—while also preparing a refreshing mint jelly to layer on top. The real skill comes in the plating: carefully unmoulding the chocolate-coated domes, arranging them with cookie crumbs and mint jelly, and creating that perfect balance of strawberries, chocolate, and mint.

Whip it up
Whip the ricotta together with the sugar, using either a hand whisk or a stand mixer with a whisk attachment. I'd recommend going easy on the sugar – this dessert works better with less sweetness.

Add the strawberries
Add the finely chopped strawberries, setting aside about five or six pieces for decoration. Whisk everything together – the strawberries will break down slightly and give the cream a lovely light colour.

Gelatine in the cream
Heat the cream in a saucepan, then whisk in the powdered gelatine thoroughly. Keep whisking until the gelatine dissolves and the cream starts to thicken. Continue stirring to make sure no lumps form.
