You're working with a pre-smoked salmon fillet that you'll flake into a quick creamy gnocchi dish loaded with cherry tomatoes and spring onions. Preparing the salmon
Salt the salmon fillet on both sides. You can also add a few of your favourite herbs and let it rest overnight. Then rinse it, pat it dry and place it on a rack. Or try Mr Cuketka's version: mix salt and sugar in a 1:1 ratio and let the fillet cure in it, then rinse and smoke for 25 minutes.

Spring onion
Heat a little olive oil in a large pan. Fry sliced spring onion in it, both the white and green parts.

Tomatoes and gnocchi
Fry for about three minutes, then add the tomatoes. I use tiny cherry tomatoes, just halved – if yours are bigger, chop them into pieces. Add the gnocchi as well.
