Homemade Smoked Salmon with Gnocchi

·
4 servings
  1. Preparing the salmon

    Preparing the salmon

Salt the salmon fillet on both sides. You can also add a few of your favourite herbs and let it rest overnight. Then rinse it, pat it dry and place it on a rack. Or try Mr Cuketka's version: mix salt and sugar in a 1:1 ratio and let the fillet cure in it, then rinse and smoke for 25 minutes.

  2. Spring onion

Heat a little olive oil in a large pan. Fry sliced spring onion in it, both the white and green parts.

  3. Tomatoes and gnocchi

Fry for about three minutes, then add the tomatoes. I use tiny cherry tomatoes, just halved – if yours are bigger, chop them into pieces. Add the gnocchi as well.

  4. Creamy sauce

Stir everything together and cook for five minutes. Season with salt and pepper, add the cream, simmer for another five minutes, then add the flaked salmon. Heat through and serve.

  5. You're done!

    Enjoy your meal!
