This wholesome gingerbread cake with spelt flour comes together in about 73 minutes and delivers a deliciously spiced treat that's surprisingly wholesome. You're mixing dry ingredients, folding in plum jam (chunky bits are totally fine), adding chopped walnuts, and baking until golden — nothing tricky, just straightforward baking that fills your kitchen with amazing aromas.

Mix the dry ingredients
Combine the dry ingredients separately so the baking powder gets evenly distributed. It's a good idea to sift the flour through a sieve to aerate it — this will make the cake much fluffier.

Stir in the plum jam
Add the remaining wet ingredients and mix until smooth. The plum jam I used was quite thick, so I didn't manage to blend it in completely — but that only made the cake better. The big chunks of jam were fantastic.

Chop the nuts
Chop the nuts coarsely, so you can actually notice them in the cake.
