Healthy Wholemeal Gingerbread Cake

  1. Mix the dry ingredients

    Combine the dry ingredients separately so the baking powder gets evenly distributed. It's a good idea to sift the flour through a sieve to aerate it — this will make the cake much fluffier.

  2. Stir in the plum jam

    Add the remaining wet ingredients and mix until smooth. The plum jam I used was quite thick, so I didn't manage to blend it in completely — but that only made the cake better. The big chunks of jam were fantastic.

  3. Chop the nuts

    Chop the nuts coarsely, so you can actually notice them in the cake.

  4. Bake

    Pour the batter into a deep baking tray lined with baking paper, or greased and dusted with flour. Bake in an oven preheated to 160°C for about 50 to 60 minutes.

  5. You're done!
