The main time commitment comes from letting the dough rise twice—first after mixing, then again after cutting—so plan for about 90 minutes total.     Make the yeast starter

    Warm the milk gently in a saucepan until lukewarm. Stir in the sugar and flour, then mix well. Finally, crumble in the yeast and stir through. Leave in a warm spot until bubbles start forming on the surface – that means your starter is ready.

    Sift the flour into a bowl and pour in the yeast starter. Add the egg yolks whisked together with lukewarm milk.

    Add the rum, lemon juice, a pinch of salt, sugar and the melted butter (slightly cooled). Work everything into a smooth dough, then leave it to rise in a warm place.

About this recipe

You won't believe it, but I avoided frying homemade doughnuts for the longest time. It seemed needlessly fiddly, plus I had plenty of other excuses. I just never felt like it. Then last year I fell in love with a recipe from my friend Janička. I tried her doughnuts and now I won't touch any other recipe. Ever! They vanished from our table in no time, so I've had to fry another batch.
