Prepare the ginger and citrus fruit
Peel the ginger with a small knife and cut it into slices or thin strips. Peel the lemons, limes and oranges and slice them thinly into quarter-rounds.

Mix everything together and pour over plenty of runny honey. Stir again, spoon into jars and store in the fridge. The ginger keeps best in honey when left to steep for at least 4 days, ideally up to a week.
