At a glance
You're making elegant tartlets with crispy shells, salted caramel, and rich chocolate filling — a showstopper dessert that's easier than it looks. The dough needs to rest overnight before shaping, and the caramel requires careful attention to heat control so it doesn't burn; then you layer in the chocolate ganache and let everything set for 24 hours before serving for the best flavor.

Make the dough ahead
Prepare the dough for the shells a day in advance, so it has time to rest properly in the fridge.

Making the dough
Combine all the ingredients in a food processor and work into a smooth, non-sticky dough. Add a little more flour if needed. If the dough seems too dry, add just a splash of cold water. Wrap the finished dough in plastic wrap and place it in the fridge.

Cutting out the rounds
The next day, take out the dough and press it into the prepared tartlet molds. Alternatively, roll the dough into a sheet, cut out rounds, and press these into the molds. The dough should be an even thickness throughout — about 3–4 mm for tartlets.
