    Chicken breasts

    Season the chicken breasts with salt and pepper, then sear on both sides in coconut oil until golden. Remove the chicken from the pan and set aside.

    Sauté with chilli

    Add the roughly chopped shallot and chilli peppers to the pan. Cook together until the shallot softens. Return the chicken to the pan and sauté everything together for a bit longer.

    Simmer under a lid

    Squeeze in the juice of half a lime, add the grated ginger and half of the coriander. Stir, then pour in the coconut milk. Let it all simmer together under a lid for about ten minutes.

About this recipe

You can make this dish with chicken or beef, fish or shrimp – it works beautifully with all of them. We added a bit of extra shallot and lime, and went with chicken. For a side, I chose jasmine rice, though various noodles would be excellent too.
