    Pour a little oil into a large pot – I like to use a big, heavy cast-iron pot. Brown the meat slices, which you've salted and peppered beforehand, on all sides in the hot oil, together with two roughly chopped onions.

    Pour in enough water to cover the meat. Add the spices, tied up in a piece of gauze so you don't have to go fishing for them later. Cover with a lid and braise until tender.

About this recipe

Tomato sauce – the most delicious, best-loved, most fragrant of them all. This is how I make it… Everyone has their own way of doing it, of course. I've settled into the method I learned from my mum: slightly sweet, fragrant with ripe tomatoes and velvety smooth. At the same time, it's easy and reasonably quick to make. What's more – and I personally see this as a big plus – it goes with all sorts of side dishes and meats. Some people love it with dumplings, others with rice. My favourite way is with little meatballs, but it's also wonderful with a slice of tender, slow-braised beef.
