Blackberry Dessert with Coconut Cream

Step-by-step method

Let’s cook

At a glance

You're whipping together a luscious coconut-mascarpone cream and layering it with crushed sponge fingers and fresh blackberries, raspberries, and redcurrants in glasses. The dessert needs to chill overnight, so it's perfect for planning ahead. This no-bake treat comes together in about 10 minutes and delivers a delicate coconut flavor with a delightful contrast of textures.

    Layer it up

Get some nice glasses ready. Put a layer of crushed sponge fingers on the bottom, then a layer of cream, then fruit, then more cream, biscuits, cream, fruit again. Keep alternating the layers until the glass is full. For shorter glasses, just do a layer of sponge fingers, a layer of cream, and finish with fruit on top.

About this recipe

For today's dessert, use whatever fruit your garden has to offer. Small, berry-type fruits that you love, that look pretty and, above all, taste wonderful. I added tested coconut cream from Alpro to the mascarpone, and the result was an amazing cream with a delicate coconut flavour. I then discovered that swapping the sponge fingers at the bottom of the glass for crushed coconut biscuits makes the dessert even better. So give it a try…
