At a glance
Get ready to wrap up some seriously impressive chicken roulades with four flavor-packed fillings to choose from—wild garlic and gouda, spicy mustard and bacon, creamy avocado, or exotic mango and brie. You'll pound cutlets thin, fill them with your favorite combo, roll them up, then sear and finish them in the oven for a restaurant-worthy dish that takes just over an hour from start to table.

Season with salt
I salted each chicken cutlet on both sides, then spread on "something" for the filling, adding more ingredients to taste.

First variation – garlic
If you have some wild garlic pesto left over at home, use it up here. If not, blend fresh wild garlic and season with salt, pepper and olive oil. Top the cutlet with a layer of Gouda so the roulade holds together nicely.
