Polycarbonate holds its shape precisely, and once set, the tempered chocolate pops right out on its own. Twenty-four cavities per mould give you just the right amount for a gift box of chocolates. Before pouring, polish the mould with a cotton cloth — fingerprints will show up on the finished praline.
