Flavour profile and composition

This chocolate is built on a high cocoa butter content (at least 28%), which gives it just the right fluidity and a silky feel on the tongue. The flavour is rich, milky and beautifully creamy, with subtle caramel undertones on the finish. Milk solids reach 22%, keeping the chocolate from being aggressively sweet and instead gently smooth. The 400 gram pack comes as small callets, ensuring the chocolate melts perfectly evenly with no lumps.

Where can you use it in the kitchen?

Callebaut white chocolate is incredibly versatile. It works wonderfully as a base for light, airy mousses, where its creamy character really shines, or in rich ganache fillings. Because it has a neutral yet genuinely honest flavour profile, it's the best base for colouring. Just add a bit of oil-soluble colouring and you can create desserts in any shade of the rainbow without changing the chocolate's texture or taste. Practical storage tips

To keep white chocolate's delicate vanilla aroma intact, store it somewhere dry and cool, ideally at a stable temperature of around 18 degrees. Once opened, we recommend transferring the pack into an airtight container, since white chocolate easily picks up odours from the fridge or spices in the kitchen. Stored properly, it will stay in perfect condition for months.
