Healthy Wholemeal Gingerbread Cake

Step-by-step method

Let’s cook

At a glance

You're mixing wholemeal spelt flour with warm spices to create a delicious gingerbread cake that's surprisingly wholesome. Plum jam chunks and walnuts add wonderful texture throughout, and the cake takes about an hour to bake — giving you plenty of time to enjoy the amazing aroma while it's in the oven.

  1. 1/4

    Mix the dry ingredients

Mix the dry ingredients separately so the baking powder gets evenly distributed. It's a good idea to sift the flour through a sieve to aerate it — this will make the gingerbread cake much fluffier.

    Stir in the plum jam

Add the wet ingredients and mix until smooth. The plum jam I used was quite thick, so I didn't manage to blend it in completely — but that actually worked in the cake's favour. Big chunks of jam turned out to be wonderful.

    Chop the walnuts

Chop the walnuts coarsely, so you can actually notice them in the cake.

About this recipe

Do you ever feel a bit guilty for constantly snacking on something tasty but not exactly good for you? This gingerbread cake made with wholemeal spelt flour is absolutely delicious and almost healthy… I found this brilliant recipe on the Apetit website and tried it out right away. Amazing stuff. I just left out the molasses, since I didn't have any at home, and used a little extra honey instead. It smells and tastes fantastic, and it disappeared in no time. The kids kept asking for extra pieces for their snack, and it's just as good with coffee at home. Perfection.
