Start with a simple cheese pastry that comes together quickly and rests for an hour before being partially pre-baked. The warm base is then topped with creamy cottage cheese, sweet pears and tangy blue cheese, then baked a little longer until golden.

    Make the soft pastry

    Mix plain flour, butter, grated hard cheese, egg and salt into a smooth dough. The dough shouldn't be sticky. If it feels too dry, add a splash of fresh milk. Wrap the soft dough in plastic film and let it rest for an hour.

    Roll out the dough

    Roll out the rested dough to the shape you need and transfer it into a tin greased with butter and dusted with coarse flour, or onto a baking sheet. Prick the dough all over with a fork and bake at 180°C for about 10 minutes.

    Spread the cottage cheese over the warm base, then season with salt and pepper to taste. Arrange the sliced pears on top and sprinkle with grated or crumbled blue cheese.
