This is a quick one-pan bake: butter, sugar and flour are rubbed together into a crumble, part of which is turned into a smooth batter with eggs and milk. Plenty of plums go on top along with the rest of the crumble, then the cake bakes to a golden finish in about half an hour, rewarding you with a beautifully moist centre.

About this recipe

It smells of buttery crumble and juicy plums – irresistible. This cake is lovely and moist, just the way most of us like it. No dry cakes here, thank you very much. I tried the recipe right away – with plums, of course. But feel free to swap in blackberries, apricots, apples, pears, whatever fruit takes your fancy.
