  • 10 gram Coconut Oil

  • 100 gram Cheddar

Step-by-step method

At a glance

This four-cheese quesadilla comes together quickly with a delicious melted center that bonds two tortillas together. You'll warm up some buttery corn and grate a mix of cheddar, gouda, blue cheese, and brie, then build and pan-fry the quesadilla until it's golden and crispy on both sides.

  1. 1/5

    Buttery corn

Melt the butter in a pan or small pot. Add the frozen corn. Season with salt and pepper. Warm through briefly over low heat.

    Ingredients

    • 50 gram Unsalted Butter
    • 150 gram Frozen corn
    • 5 gram Salt
    • 5 gram Black Pepper
  2. 2/5

    Prep the pan

Get out a large frying pan. Heat it over medium heat and melt a teaspoon of coconut fat in it - just enough to lightly grease the surface. You won't need to add any more fat before cooking the next tortillas.

    Ingredients

    • 10 gram Coconut Oil
  3. 3/5

    Top the tortilla

Place one tortilla in the hot pan. Sprinkle over all the grated cheeses and the chopped brie. Scatter a quarter of the buttery corn on top.

    Ingredients

    • 8 piece Tortilla
    • 100 gram Brie
    • 100 gram Gouda
    • 100 gram Cheddar
    • 100 gram Blue Cheese
    Top the tortilla

About this recipe

Another recipe I've put together for the Santa Maria brand of Mexican ingredients. This time it's an incredibly tasty dish that won't take up much of your kitchen time either. Maybe a little fusion with Italian cuisine, basically a quattro formaggi quesadilla.
