First you make a shortcrust pastry that needs to rest in the fridge for a while, and in the meantime you simmer the rhubarb until soft. The curd cheese, custard powder, eggs and rhubarb are whisked into a smooth cream, which is poured over the pastry base in the tin. Finally, the top is covered with grated pastry crumbs, and the cake is slowly baked until golden - it takes a bit of time, but the result is well worth it.

    Pastry

    Mix the fine semolina flour with the baking powder and icing sugar. Add the egg yolks and the chilled butter cut into small cubes. Work into a firm, non-sticky dough. Wrap it in cling film and let it rest in the fridge for at least an hour.

    Divide into three

    Divide the dough into 3 equal portions. Put one portion back in the fridge. Combine the remaining two and use them to prepare the base for the tin.

    Prepare the tin

    Line the bottom of a 25 cm springform cake tin with baking paper, tucking it neatly into place. Grease the sides with butter and dust with fine semolina flour.

About this recipe

I've loved rhubarb ever since I was a kid. It grew in the corner of our yard, right by the garden gate. I used to love breaking off a piece, eating it, and pulling faces at how sour it was. Back then I fell head over heels for a really simple rhubarb sheet cake my grandmother used to bake, studded with chunks of rhubarb. And rhubarb stewed fruit too, of course.
