Rainbow Cabbage Salad Full of Color and Vitamins

Step-by-step method

Let’s cook

At a glance

You're looking at a vibrant, 15-minute salad that comes together with shredded cabbage, grated carrots, and sliced leeks tossed with a tangy yogurt-mustard dressing. The whole thing requires just basic knife skills and mixing—no cooking involved, making this a perfect quick fix when you want something fresh, colorful, and packed with vitamins.

  1. 1/2

    Vegetables

Shred the cabbage, grate the carrot and slice the leek into half-rounds. Mix everything together, season with salt and pepper, and pour over the dressing.

Make it by mixing yogurt, mustard, oil and lemon juice. Finish with chopped herbs if you like — this time I used chervil and parsley.

About this recipe

The more the colors outside fade away, the more I feel I need to bring them into the house. And since my husband keeps refusing to repaint the walls, I make up for it with colorful food instead… this salad is quick, cheap and downright luxurious!
