Custard Sheet Cake, the All-Time Favorite Traybake

Step-by-step method

Let’s cook

At a glance

You'll whisk together a simple batter, pour custard over the top, and let the oven work its magic for 40 minutes — then finish with a brushing of sour cream and cinnamon sugar while it's still warm. The beauty of this traybake is that it comes together quickly with minimal fuss, and the uneven patches of batter peeking through the custard are part of its rustic charm.

  1. 1/8

    Preheat the oven

Preheat the oven to 170 °C.

  2. 2/8

    Make the custard

Heat the milk (750ml) in a saucepan and sweeten with sugar. Once the milk is hot, almost boiling, stir in the remaining milk in which you've whisked both vanilla custard powders. Stir until it thickens, then keep cooking over a gentler heat for about five more minutes, until the custard is nicely thick.

About this recipe

This simple cake is often known as custard cake or 'blanket' cake. You pour custard over the batter, and once baked, brush it with sour cream. Simple and unbelievably good.
