The cream comes together in minutes from quark, yogurt and cream, then it's layered in a tin with sponge fingers and fresh fruit. The prep itself only takes a moment — the real waiting game is letting the cake set overnight in the fridge.

    Blend it together

    Whisk the quark with yogurt, soured cream and whipping cream together in a food processor. There's no need to sweeten it.

    Prepare the tin

    Get a springform cake tin ready. Line the sides with a strip of baking paper. Then layer up your prepared ingredients.

    Layer it up

    Start with a layer of sponge fingers on the bottom of the tin, then a layer of cream, a layer of fruit, another layer of cream, a layer of sponge fingers, another layer of cream, and finish with a layer of fruit. Leave in the fridge overnight to set.

About this recipe

No-bake cakes with fruit are a hit every summer. I recently shared a recipe for a no-bake buttermilk cake, and this time I've taken it a step further with a wonderfully flavoured quark from Madeta. It's been a real winner in our house, honestly it's that good. So far I've only tried the vanilla one, but I'll be keeping an eye out for other flavours in the shops too.
