At a glance
You're making two doughs — vanilla-lemon and cocoa-orange — that you'll tear into pieces and layer together to create striking marble patterns. The key to showing off those beautiful swirls is rolling the dough out as little as possible and skipping any sugar dusting or chocolate coating. Each batch takes about 44 minutes to prep and 9 minutes to bake, plus at least three days for the cookies to mellow in storage.

Cube the butter for both doughs
Cut the butter into roughly 1 cm cubes, divide it into two batches of 100 g each and return both to the fridge. It will chill while you prepare the other ingredients.

Prepare two flavor bases
Divide the sugar into 50 g and 58 g portions. Grate lemon zest into the first and orange zest into the second. Split the vanilla bean seeds between the two and rub them in with your fingertips.
