One tube, a whole range from powder pink to wine red

Ruby isn't just for deep red. Add it in very small amounts and you'll get a soft pink that's perfect for wedding cakes or pastel cupcakes. Add more and the shade gradually deepens into a richer raspberry, and at full strength you get a deep ruby red with a wine-toned undertone. That's ideal for Valentine's cakes (think Red Velvet cake or macarons), buttercream roses, red sugarpaste coverings, or glazed Christmas gingerbread.

So from a single tube you can create a whole range of shades without needing several different colours.

One more practical tip: add the colour gradually and let the coloured mixture sit for a while. Red and pink shades tend to intensify over time, so a colour that looks too pale while you're mixing it can end up being exactly right after it's had time to develop.

Everywhere Ruby works its magic

This gel colour works in sugarpaste and modelling paste, buttercream, royal icing, glazes and cake batters. That means you can easily match your coating colour to your buttercream decorations without hunting for two different colours that happen to coordinate.

Add it to your batter before baking. The manufacturer states the colour is stable during baking, so the shade should stay vibrant even after your bake comes out of the oven. With red shades, it's worth starting with a light-coloured batter, one without cocoa, for instance. Darker ingredients affect the final colour, and red won't come through as vividly as you want if you start too dark.

What to watch out for – chocolate and coatings

Here's an important detail: this gel contains water, and water and chocolate don't mix well. If you add it to melted chocolate or a chocolate coating, the chocolate can thicken, seize up and turn grainy.

For colouring chocolate, cocoa butter and chocolate decorations, you need an oil-based colour instead.
