Gorgeous Currant Tart with Almond Filling

Step-by-step method

Let’s cook

At a glance

You'll start with a simple butter pastry that needs a two-hour rest in the fridge, while you whip up a delicate almond filling with eggs and cream. The pastry is lined into a tin, sprinkled with almonds, topped with the filling and scattered with currants, then left to slowly turn golden in the oven for about three quarters of an hour.

About this recipe

I picked my currants — both black and red. And some jostaberries too. And baked a really lovely tart. The filling was inspired by the wonderful Lenka, who made something similar on her last visit, only with strawberries. I'm making the most of this beautiful summer weather while it lasts.
