Unconventional Linzer Cookies with Pistachios

Step-by-step method

Let’s cook

At a glance

These festive pistachio Linzer cookies call for some patience — you'll chill the dough for at least an hour (or overnight) to keep everything cold and flaky, then bake them carefully so they stay light and tender. Once cooled, you'll sandwich them together with a creamy hazelnut filling and top with melted chocolate and crushed pistachios for a Christmas treat that's worth the extra steps.

About this recipe

Linzer cookies are the most popular Christmas cookies in our house. A real classic, filled with redcurrant or another red jam. Enjoying them by the tree with a cup of coffee or tea… that's what true Christmas coziness is all about. We always make a big batch of Linzer dough — at least three batches at a time, because we also use it for tartlet shells, beehive bases and other cookies.
