Over the course of two days you'll make a buttery pastry dough for the shells (which needs to rest in the fridge), and cook up both the caramel and the chocolate cream. The tartlets are filled in layers, then decorated, and taste best once they've had time to rest properly.

Make the dough ahead of time
Prepare the pastry for the shells a day in advance. This lets it rest nicely in the fridge.

Making the dough
Combine all the ingredients in a food processor and work them into a smooth, non-sticky dough. Add a little extra flour if needed. If the dough seems too dry, add a splash of cold water. Wrap the finished dough in plastic wrap and chill in the fridge.

Cutting out the rounds
The next day, take the dough out and press it into your tartlet molds. Alternatively, roll it out into a sheet, cut out rounds, and press those into the molds. The dough should be an even thickness throughout — about 3–4 mm for tartlets.
