At a glance
This stunning two-day pastry challenge involves building layers of sponge cake, silky cream, and fresh strawberries — the trickiest part is arranging the strawberries neatly around the sides and getting the creamy layers to set just right before adding the top sponge. You'll need patience to spread the work over two days and attention to detail when piping or spreading the cream, but the impressive result is absolutely worth the effort.

Prepare the tin
Preheat the oven to 180 °C. Line two baking trays with baking paper. You'll need a cake tin measuring 26 cm in diameter. Trace around the tin onto the baking paper with a pencil, then flip the paper over so the pencil mark faces down — you'll still be able to see the circle clearly through the paper.

Whip and whisk
Beat the egg yolks with the sugar until light, pale and fluffy. Whisk the egg whites into stiff peaks. Fold the flour into the yolk mixture, then very gently fold in the egg whites, a little at a time. The batter should be smooth, with no lumps of flour or streaks of egg white.

Divide the batter and bake
Spoon half the batter onto the centre of one sheet of baking paper, and the other half onto the second sheet. Spread it out to just past the traced circle, by about 1.5 cm. Bake one sponge at a time in the preheated oven until golden — this should take about 15 minutes each.
