Cauliflower Fritters, Just Like My Mom Makes Them

Step-by-step method

Let’s cook

At a glance

You're looking at a hearty, cheesy cauliflower fritter that's all about tender cauliflower mixed with fluffy egg whites, bacon, and melted gouda—ready to fry up in about 45 minutes total. The trickiest part is getting the texture right by gradually adding flour and carefully folding in those egg whites to keep them airy and light.

  1. Prepare the cauliflower

    Prepare the cauliflower

Remove the green leaves from the cauliflower, break it into florets and boil until soft in salted water. Drain and pat dry. Let it cool, then mash it.

    Whisking

Separate the eggs into yolks and whites. Whisk the whites into stiff peaks. Stir the yolks into the mashed cauliflower. You can add other ingredients too — I added corn.

  3. Add the flour

    Add the flour

Gradually stir in the flour. You might not need the full 200 g, or you might need even more — it all depends on the size of the cauliflower and how soft it is.

About this recipe

Cauliflower fritters are one of my favorite dishes from childhood. Mom made several versions, sometimes adding corn, sometimes bits of chicken, but my favorite was always the one with pieces of fish fillet mixed in. Those were the tastiest to me. Nowadays I make them myself, for my own kids.
