How do you fill cupcake cases?
These cases come in the classic size – a base of roughly 5 cm across, a top edge of about 7.5 cm, and a height of around 3 cm. Fill them about two-thirds full with batter, leaving enough room at the top for the cupcakes to rise and, if you like, for a layer of frosting.
Want the colour of your cases to really pop once baked? With wetter or butter-heavy batters, it helps to bake using two cases nested together – the inner layer soaks up the grease, keeping the outer one clean and vibrant. It's a favourite trick among bakers that works with any paper cases.
