Bake a Strawberry Tart with a Sablée Crown

What's inside this tart

This tart has five layers, and each one plays its own role. A crisp flower-shaped sablée crown on top, golden almond frangipane underneath, strawberry confit with a light citrus tang, silky clouds of whipped white Callebaut W2 ganache, and fresh strawberries cut into quarters tucked in between. When you cut into it, you'll hear the crown crackle, then feel the soft give of the frangipane, and finally the ganache melts on your tongue. Five textures in a single spoonful.

What you'll actually need for this recipe

The recipe walks you through every step, from blooming the gelatine to whipping the ganache. What it won't give you is the equipment and ingredients the result depends on. I've picked out four items that will take the recipe exactly where you want it to go — two that shape the tart and bake it beautifully, and two that bring real depth to the flavour.

Why a perforated tart ring — and why Callebaut W2

The tiny holes around the perforated ring let hot air in and steam out, so the pastry bakes evenly right to the edges. With a solid tin, the base often stays damp while the rim is already golden — with this ring, you won't run into that problem. The fluted edge also gives the tart that signature pâtissier shape you simply can't get with a plain ring.

Alongside it, I chose Callebaut W2 white chocolate — the brand pastry chefs across Europe reach for. It has a well-balanced cocoa butter structure and a subtle vanilla-milk profile, so once whipped, your ganache holds its shape, pipes beautifully and won't turn hard.

Details you only notice once you taste it

Real vanilla versus vanilla sugar is a difference you'll notice instantly in the ganache — real vanilla has room to unfold, with nothing masking it. And powdered gelatine, not sheets, measures out precisely by weight, so you know exactly how firm your confit and ganache will set. These two details are why your tart stays picture-perfect from the evening photoshoot right through to breakfast the next day.

Why the sablée dough needs an overnight rest in the fridge

Pâte sablée will shrink as it bakes if you roll it out and pop it straight in the oven. Chilling it overnight lets the flour hydrate properly, relaxes the gluten, and helps the dough hold its shape — so it stays exactly where you put it once it's baking. And once the crowns come out of the oven, resist the urge to touch them. Hot sablée is as fragile as glass and will shatter under your fingers. Let it cool completely on the tray first. Only then carefully transfer it onto the tart, without having to go back and make a second batch of dough.

A ring that outlasts strawberry season

The first tart you bake in it will be a strawberry one. But this ring will serve you for years to come — a peach tart in July, a pear and caramel one in autumn, a lemon and ginger one in winter. Pâte sablée, frangipane, whipped ganache — it all works beautifully in it. This strawberry version is just the beginning.
