At a glance
You're making a homemade elderflower syrup that needs a 24-hour wait in the fridge before it comes together—the key is letting those flowers infuse with lemon and sugar overnight. After straining and a quick simmer, you'll have a soothing, versatile syrup ready to use in teas, drinks, or as a remedy, with a total hands-on time of just 35 minutes spread across two days.

Prepare the elderflowers
Bring all the water to the boil, then let it cool. Add the elderflower heads (10 pcs), which you should have left spread out on the table or floor for a while beforehand, so any little bugs or other insect residents can crawl out.
