Salad with Grilled Goat Cheese, Apple and Walnuts
·Arrange slices of goat cheese on toasted bread. Pop them under a hot grill for just a moment to melt. Keep a close eye on them, as they can burn very quickly.
In a dry frying pan, toast the chopped walnuts, then after a moment add half an apple, peeled and cut into small cubes.
Whisk about two teaspoons of vinegar with salt, beating until the salt has dissolved. Then add pepper, honey and about two tablespoons of olive oil. Whisk again until you get a lovely smooth dressing.
Toss any salad greens you like (I chose lamb's lettuce and rocket) with the walnuts and apple, drizzle with the dressing, and top with the goat cheese toast, which you can cut into small pieces if you like.
