Pumpkin Pie

Cookie Crust
Crush the cookies (graham crackers or similar) and mix with melted butter. Knead by hand and press firmly into a round pan.
Bake
Pop it into the oven for 10 minutes at 175°C.
Filling
Combine all the ingredients in a bowl and whisk together. The batter will be fairly runny.
Bake
Pour the filling into the pan and bake again for about 35 minutes (you'll know it's done when the filling has set and looks like a thick pudding with a set top).
Decorating
Set the pie aside to cool, and in the meantime whip the cream with sugar to make whipped cream to top the pie.
