Pumpkin Butter – the Delicious Taste of Autumn
·Cut the pumpkin in half lengthways, score the flesh, and brush with olive oil. Season with salt, and feel free to add your favourite herbs or spices. In our house thyme and nutmeg are big favourites, and we always keep a chilli version on hand in the fridge too.
Roast in the oven at 180°C for about 30 minutes.
Once out of the oven, scoop out the flesh with a spoon and blend it together with the butter.
The photo shows a sandwich spread with pumpkin butter and topped with roast meat, served alongside a salad with apples and sage.
