Marinated Spicy Tvarůžky – A Treat Not Just for the Guys
·Get a clean, dry jar with a tight-fitting lid ready. Layer the sliced tvarůžky, onion half-rings, sliced garlic, sun-dried tomatoes, and sliced chilli peppers (seeds included), alternating as you go.
Sprinkle with pepper and add a couple of bay leaves. If fresh herbs are in season, feel free to add your favourites too – a sprig of lovage, rosemary or thyme all work beautifully.
Pour in the oil from the sun-dried tomatoes first, then top up with sunflower oil. Use enough oil to make sure everything in the jar is fully covered.
Seal the jar and leave the tvarůžky to mature in a cool place for at least a week, ideally two to three. If you store them somewhere less cold than a fridge, like a pantry, they'll be ready sooner. Check them regularly until they've turned nice and soft.
Feel free to add extra ingredients to the jar to suit your taste – pickled chilli peppers, olives, capers, chunks of fresh colourful pepper, or juniper berries.
You can also marinate the tvarůžky in beer instead of oil – a good-quality dark beer works best. Before marinating, you can also coat the cheese in hot or sweet paprika.
