Hot Dog with Sausage and Mustard Mayo
·The day before, marinate the sausages in a mixture of spices and oil.
Peel the onion and slice it into rings or wedges. Melt some lard in a pot and add the onion. Fry over medium heat until golden, then let it turn light brown. Season with salt and pepper. Add a splash of water if needed.
The onion prepared this way can be stored in the fridge for several weeks, so feel free to make a batch ahead. Stir the mustard into the mayonnaise.
Slit the hot dog buns and grill them lightly. Grill the sausages until nicely crisp.
Spread the mustard mayo inside the sliced bun, add a portion of the caramelised onion, cucumber slices and the sausage. Add extra salads or tomato slices to taste, if you like.
