Homemade Date Syrup

  1. Soak the dates

    Soak the dates

    Soak the pitted dates in water (skins on) and gently mash them with your hands to help them soak up more water. Leave to sit for about 4 hours.

  2. Mash again

    After 4 hours the dates will be nicely plumped up. Mash them again with your hands, this time a bit more thoroughly.

  3. Blend

    Blend

    Blend the dates in the water with a hand blender until smooth.

  4. Strain the syrup

    Strain the resulting syrup through a sieve and pour it into jars.

  5. Storage tip

    Storage tip

    I keep the syrup in the fridge, where it lasts at least 3 weeks.

  6. You're done!
