Homemade Almond Muesli Bars

    Spread on a baking tray

    Preheat your oven to 180°C (fan/convection). Spread the oats and chopped nuts out on a large baking tray. The nuts should be a mix of coarsely and finely chopped.

  2. Bake

    On the tray, mix the nuts with the oats and bake for 15 minutes on the middle shelf of the oven.

  3. Add the peanut butter and blend the dates

    Add the peanut butter and blend the dates

    Mix the honey with the peanut butter and pop it in the oven for a moment alongside the oats and nuts. This will warm and melt the mixture together. Blend the dates into a sticky paste.

  4. Mix together

    In a bowl, combine all the prepared ingredients. This creates the base mixture for the bars.

  5. Transfer to a tin and smooth out

    Transfer to a tin and smooth out

    Line a shallow dish, roughly 23 x 30 cm, with plastic food wrap. Spread the mixture into it and smooth down evenly.

  6. Chill, then slice

    Chill, then slice

    Place in the fridge for at least an hour to firm up. Then cut into pieces about the size of store-bought muesli bars, or into small cubes.

  7. Storage

    Store in an airtight container or in the fridge.
