Heavenly Potato Gratin
·Peel the potatoes, wash them and pat dry. Cut into very thin slices. You can use the slicing attachment on a food processor or a hand-held mandoline, similar to the one in the photo. The slices should be thin and even.
Put the potatoes in a large bowl and coarsely grate the cheese over them. Season with salt and pepper.
Add the cream and mix thoroughly, making sure every potato slice is well coated.
Grease a baking dish with butter and tip in the potato, cheese and cream mixture. Level it out and dot the top with pats of butter.
If you like, sprinkle a little extra cheese over the top. Bake in an oven preheated to 200°C.
Bake for about an hour, until the top is golden. To check if it's ready, pierce a slice of potato from the middle of the dish to see if it's tender. Serve just as it is, with a salad, or as a side to your main course.
