Fluffy Oven-Baked Dutch Baby Pancake
·Preheat the oven and skillet
Preheat the oven to 200 °C. Place a 25 cm cast-iron skillet in the middle of the oven and let it heat up for at least 5 minutes. This step is key to getting a perfect puff.
Make a smooth batter
In a bowl, combine the eggs, flour, milk, a tablespoon of maple syrup, salt and vanilla sugar. Whisk everything together thoroughly until you have a smooth batter.
Melt the butter and pour in the batter
Carefully remove the hot skillet from the oven. Add the butter and let it melt completely. Then quickly pour in the prepared batter.
Bake until golden
Carefully return the skillet to the oven and bake for about 20 minutes. The pancake will puff up beautifully and turn golden. Don't open the oven door while baking, or the pancake may collapse.
Serve and enjoy
Carefully take the finished pancake out of the oven. Dust it immediately with icing sugar, top with fresh fruit, and serve with maple syrup. Cut into wedges and dig in right away.
