Flourless Zucchini Fritters
·Coarsely grate the zucchini into a large bowl. Salt it and let it sit for a while to "sweat" out the excess water. Squeeze out the liquid thoroughly.
Add the eggs and stir well. Add the rolled oats and grated cheese. Season with pepper and stir in the fresh herbs.
Mix the batter and let it rest for half an hour. The oats will soak up the moisture, giving you a thicker batter. Shape the mixture into fritters and fry on both sides in hot sunflower oil until golden.
Serve as a delicious lunch with potatoes, mashed potatoes or a salad. They're also great cold, as a snack or a light dinner. Try pairing them with a dip made from white yoghurt, garlic and herbs.
