Extra Chocolate Chilli Cookies

  1. Chop the chocolate

    Chop the chocolate. Don't worry about being too precise — some pieces bigger, some smaller is exactly what you want.

  2. Mix the dry ingredients

    In a bowl, combine the flour with cocoa and baking soda. Add the chilli spice mix and sea salt.

  3. Prepare the mixture

    Whisk the eggs with the sugar until you get a smooth, pale foam, then add the softened butter. Fold in the dry ingredients and the chopped chocolate.

  4. Form the chocolate dough

    Bring the dough together by hand or with a wooden spoon, then chill it in the fridge for at least two hours.

  5. Shape the cookies

    Take the dough out of the fridge and pinch off pieces about the size of a ping-pong ball. Roll each piece into a ball in your palm, then flatten it into a disc about half a centimetre thick.

  6. Bake

    Place the discs on a baking tray lined with baking paper. Bake in an oven preheated to 180°C for about 10 to 12 minutes.

  7. Tip

    Let them cool on a wire rack. They keep pretty well for quite a while — but trust me, they'll be gone in no time.
