Curd Cheese Dumplings with Fruit Sauce
·Curd cheese mixture
Mix the curd cheese, milk, a pinch of salt, and coarse semolina together. Separate the egg yolks from the whites. Add the yolks to the curd cheese mixture. Whip the egg whites into stiff peaks and gently fold them into the rest of the mixture.
Boil in hot water
Fill a wide pot with water, add a pinch of salt, and bring to a boil. Using two spoons, cut off pieces of the batter and shape them into dumplings. Drop them into the boiling water and cook for about 4 to 5 minutes. The dumplings are done once they float to the surface.
Drain
Drain the dumplings and serve topped with strawberry sauce. Thanks to the whipped egg whites, the dumplings turn out beautifully light and fluffy, almost like a foam.
Strawberry sauce
Cut the strawberries into pieces, place them in a pot, sprinkle with a little sugar, and simmer briefly. Stir in the cream. You can serve it with larger strawberry chunks or blend it smooth. You can also make a cold version of the sauce: simply mash the strawberries with cream and a bit of sugar.
