Apple Bundt Cake with Coconut Fat
·Grate the apples
First, preheat the oven to 160°C. Peel the apples and grate them coarsely. Immediately drizzle with the juice of one lemon so they don't brown.
Whip it up
Beat the butter with the sugar until fluffy. Add the eggs one at a time, along with the cream. Beat until you have a smooth mixture.
Dry ingredients
In a second bowl, combine all the dry ingredients – flour, baking powder, baking soda and spices.
Pour into the tin
Pour the batter into a greased and floured bundt tin and bake for about 60–80 minutes, depending on the type of tin.
The skewer test
The cake is done when a skewer inserted into the centre comes out dry, or with just a few crumbs sticking to it. There should be no wet batter clinging to it.
Turn out and dust with sugar
Turn the cake out onto a rack straight away and let it cool. Dust lightly with sugar, and it's ready to enjoy.
