What you'll find in one brownie

On top you get a thin, paper-crisp crust, formed from whipped egg foam. Underneath hides a dark, slightly fudgy center, deliberately left a touch underbaked so it stays pleasantly gooey. Over the brownie runs a peanut butter and white chocolate glaze, generously topped with chocolate shards. Everything is finished with flaky sea salt, which balances the sweetness and lets the chocolate flavor really shine.

This is a full-on chocolate dessert that doesn't pretend to be anything else — exactly what you reach for when you're craving something really properly chocolatey.

What you absolutely need for this recipe

The recipe will tell you how long to whip the eggs or when to pull the brownies out of the oven. What it won't tell you is how much the ingredients themselves matter. And with brownies, that's crucial — there aren't many ingredients in the batter, so each one has its own influence on the final taste and texture. That's why I picked out four that play the leading roles in this recipe: two form the dense chocolate base, and two more take care of the perfect top layer and extra depth of flavor.

Why Callebaut 811 — and why inverted sugar

A full 200g of dark chocolate goes into the batter, so its quality really matters. I fine-tuned this recipe with Callebaut 811. The chocolate callets melt evenly, you don't have to chop them with a knife, and they behave consistently every time you bake, so you can count on a reliable result.

Inverted sugar plays an important role too. It's hygroscopic, meaning it binds water and helps keep it in the batter. That's what keeps the center dense and gooey, instead of too dry or too airy. With plain granulated sugar alone, you'd struggle to get the same texture.

Details you'll only notice once you taste it

This time I chose Tanzanian vanilla instead of the classic Madagascar Bourbon. It has a fuller, slightly spicier flavor profile, so in this recipe it doesn't compete with the chocolate — instead it helps deepen its flavor.

You can use the second pod from the pack at Christmas, when vanilla gets more room to shine — think linzer cookies, vanilla crescents, or Ischl biscuits.

And the chocolate shards? They're mainly here for textural contrast. A dense, almost creamy center deserves something crunchy too.

Enough ingredients left over for more batches

The ingredients in this kit go further than just one batch of brownies — or other desserts too. After your first bake, you'll have leftovers from each pack, so you can bake another batch or use them in other recipes. Chocolate works great in cookies, vanilla in Christmas baking, inverted sugar in caramel or ice cream, and chocolate shards anywhere you want to add a bit of texture.

So you're buying full packs of ingredients that you can gradually use up in future baking.

Why the eggs get whipped for several minutes

That thin, glossy crust on top of the brownies doesn't come from the chocolate or the baking time. It's the result of properly whipped eggs and sugar. When you whip the eggs with granulated, cane and inverted sugar for several minutes into a pale, airy foam, the sugar dissolves fully into it, and during baking it forms that signature thin, crackly layer on top.

If you cut the whipping down to just a few dozen seconds, the crust simply won't form. And what comes next matters just as much: fold in the cooled chocolate slowly and gently, so you don't knock out the air you just whipped into the eggs.
