Summer Fruit Tart in a KitchenAid Baking Pan

  1. Prepare the pan

    If you have the same pan as mine, from KitchenAid, it has a non-stick surface so there's almost nothing you need to do. I just gave it a light coating of butter – partly for the flavor too.

  2. Line the pan with pastry

    Line the pan with the puff pastry. Set aside a piece for decorating the top.

  3. Prick it and brush with jam

    Prick the base with a fork and brush it with jam. You can also mix the jam with a splash of alcohol – rum, cherry brandy, port, or something similar works well.

  4. Whip the quark

    Whip the quark together with the sugar and eggs. Spread half of it over the pastry in the pan. Arrange a thin layer of some of the fruit on top of the quark, then cover it with the remaining quark.

  5. Add fruit and decorate

    Add fruit and decorate

    Add another layer of fruit on top of the quark. Cut the leftover pastry into strips and use them to decorate the top of the tart.

  6. Bake

    Bake at 175°C for about 45 minutes. Let cool before serving.

  7. You're done!
